Big & Little

I have both crock pots going this morning... one with supper and one with dessert. I don't have much to say at the moment... I am very tired and heading for a nap with Jonathan who is sick... so instead of blabbering on I will post the recipes that are cooking in my kitchen.

Orange Chicken with Sweet Potatoes
Serves 4

3 large sweet potatoes, cut into 1/4 inch slices
2/3 cup flour
3/4 tsp ground cinnamon
2 tsp brown sugar
1/8 tsp pepper
1/8 tsp garlic powder
1 lb boneless, skinless chicken breasts
1 10 3/4 oz can low fat cream of chicken soup
1/2 cup orange juice

Spray inside of slow cooker with cooking spray.
Arrange potato slices in bottom of slow cooker.
Combine flour, cinnamon, brown sugar, pepper, and garlic powder in large Ziploc bag and shake until mixed.
Drop chicken breasts in bag and shake to coat with flour mixture; arrange chicken on top of potato slices.
Combine chicken soup and orange juice in medium bowl and mix well; pour over chicken and potatoes.
Cover and cook on low heat for 8-10 hours or high heat 4-5 hours.


Apple-Cranberry Dessert
Serves 8
1- 21 oz can More Fruit Cinnamon 'n' Spice Apple pie filling
1- 16 oz can whole berry cranberry sauce
1/2 cup raisins
1 1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
angel food cake, non fat ice cream, or frozen yogurt

Spray inside of slow cooker with cooking spray.
Spoon Apple pie filling into bowl and chop apples into small pieces.
Add cranberry sauce, raisins, cinnamon & nutmeg and mix.
Spoon mixture into slow cooker.
Cover and cook on low heat for 4 hours.
Serve warm or cold as a topping for angel food cake, ice cream, or frozen yogurt.



I adjusted the dinner recipe since we are a family of 7 and not a family of 4.
For the dessert we are having that warm over Angel food cake :)

and now that supper is going Jonathan and I are headed for a nap... he already got a head start and is asleep on my lap.
