It worked!!

the baby cereal cookie bars I made last night.... J5 is happily munching away on one :) And J4 is eating one too LOL they do actually taste good, I tried a piece of one last night. This is going to be a great way to get him to have some healthy food with vitamins in it since he wont eat the baby cereal the old fashioned way. This is the recipe I used... it made 8 of the cookie bars the way I made them.

Baby Cereal Cookies* (6mos and up)
2 Tbs Shortening
1/2 C. sugar ( I used Splenda baking blend)
1 egg
1tsp baking powder
1/4 tsp salt
1 1/2 tsp vanilla
1 tsp water
1 1/2 C. baby cereal
Heat oven to 300 degrees. Cream shortening and sugar. Add eggs, baking powder, salt, vanilla, and water. Mix until well blended. Gradually stir in cereal. Knead until smooth. Pat into rectangle. Cut into 12 1" bars, smooth edges so they will not be sharp. Place on ungreased sheet. Bake 20-30 min or until dry. Store in uncovered container overnight.

So if you are looking for an easy way to get some good food into your kid/kids you might want to try this. You can add little things in it to I suppose such as raisins... and you can use any of the baby cereals, even the ones with fruit added in :)
It is a quick and easy breakfast or snack to take along with you also.
