Whats in The Belly!

Warm, delicious food! I cooked a dish last night in the crock-pot.... I LOVE my crock pot and I love crock pot cooking! Last nights dinner was oh so delicious! We had happy mouths! It warmed the belly and comforted the spirit. Wanna know what it was? Well I have to tell you... because it was just way too good NOT to share!

Festive Pork Dinner
serves 8

1 cup chunky style cinnamon applesauce ( I couldn't find chunky cinnamon so I bought chunky and added my own cinnamon... also we have a really large crock pot so I actually did 2 cups to fill the bottom of our crock)
2 29oz cans sweet potatoes, drained and sliced (I didn't slice them... they were too mushy for me to enjoy touching them lol)
2 tbsp. brown sugar
2 lbs. boneless pork loin chops ( the thickness we got yielded 8 chops)
1 16oz can whole cranberry sauce

Spray inside of slow cooker with cooking spray.
Spread applesauce in slow cooker
Add sweet potato slices and sprinkle with brown sugar
Top with pork chops and spoon cranberry sauce over top.
Cover and cook on low heat for 7-9 hours OR high heat for 3 1/2 to 4 1/2 hours.

Your mouth and your belly will love you for making this dish... this is so good!

Thanks, I copied it to my recipe folder. I don't use my crock pot as often as I should/could. I did make autumn stew (beef stew with fresh pumpkin added), and love to make chicken & dumplings in mine. Keep cookin'! MJ

The crock-pot is my best friend LOL with the kids running around and needing this or that I dont have to worry about them needing me while I spend hours in the kitchen preparing a regular stove top meal... and I can leave the house without worrying about the stove being left on. I have never had Autumn stew! Sounds good though!

Yum. That sounds really good. I'm going to file that away for later this winter.
I've been cooking a lot with the crockpot during the week lately. It's so nice to come home to already-cooked food and a good smelling house after a long day at work!
